Because nugget ice packs differently and contains more surface area, it changes cup displacement and melt behavior. Flake ice: maximum contact for displays and process cooling

Flake ice consists of small, thin pieces that conform around food and products. That contact makes it effective for seafood displays, produce, meat processing, bakery mixing and industrial temperature control. It can create an even presentation bed without the large gaps left by cubes.

Flake ice is not automatically the best choice for every cold display. The machine, storage and delivery method must fit the amount of ice handled, the temperature target and the sanitation process.
